SPARKLING 100% CARTOIXÀ ANCIENT METHOD AND AGED IN CORK
VINEYARDS AND WINE:
Old Vines of Cartoixà, name as the variety is called in the area, cultivated in organic farming in La Nou de Gaia, a small town located in the Tarragona province about 4 km straight to the Mediterranean Sea. The soils are generally sandy loam of low fertility. The grapes ripen perfectly thanks to the warm weather and the marinade; the marinade is the sea breeze blowing early in the morning in our vineyards, avoiding excess heat in grapes and causing a sanitizing effect on the vineyard.
Once harvested the grapes are destemmed and pressed. The must is carried to stainless steel tanks and allowed to stand for 24 hours at low temperature. The fermentation duration is about 15 days at a temperature of 14 to 15ºC. After making transfers to clean the wine, organic sugar cane and yeasts are added to the base wine. Then, this wine is bottled in cava bottles with cork stoppers.
The second fermentation or “foam seal” will be made in the bottle and it will be aged for a minimum of 15 months. The sparkling wine carries the remains of the fermentation lees in the bottle until the moment of consumption, since the contact with the lees maintains the aromas of base wine and does not evolve. It allows maintaining the freshness in the mouth and nose.
Green colour, a little muddy. The carbonaceous gas is perfectly integrated in a rosary of fine and constant bubbles. The aroma varietal is a mix of cool notes (peaches, fennel, lime…) and white flowers. Because of the aging with the caps of cork we can find sweet shades: white toast, cinnamon, caramel, quince, honey… The step of mouth is wide, structured, cool and with nerve thanks to his tocs citric. At the end of mouth highlights the presence of dry fruits and the long aftertaste.
Recommended temperature of consumption: 7-9ºC.
