Old Vines of Cartoixà, name as the variety is called in the area, cultivated in organic farming located in La Nou de Gaia, a small town located in the Tarragona province about 4 km straight to the Mediterranean Sea. The soils are generally sandy loam of low fertility. The grapes ripen perfectly thanks to the warm weather and the marinade; the marinade is the sea breeze early in the morning blowing in our vineyards, avoiding excess heat in grapes and causing a sanitizing effect on the vineyard. Once harvested the grapes are destemmed and pressed. The must is carried to stainless steel tanks and allowed to stand for 24 hours at low temperature. The fermentation time is about 18 days at a temperature of 14 to 15ºC. Once finished the fermentation lees are stirred once a week to get smoothness and unctuousness. To make the Mèdol Cartoixà, no fining or stabilizers are added, only a slight leak at the time of bottling. The duration of aging in lees for harvest 2015 is 8 months. The wine does not contain any preservatives, at no time is added sulfur or sulfites.

Allows a wide range of pairings thanks to its size and structure, it is ideal for the kitchen of the region as casseroles rice, tartlets fish, “xatonadas”, “coques de recapte”, “esqueixada” cod, cheese platters, sausages complement, etc. The serving temperature is around 12-14ºC.
